Mexican Fruit Salad by Briana Lassiter

I chose this recipe as the last one for the Summer Salad series because it’s the easiest and most versatile in my opinion, and I know for me at this point in the summer when everyone’s a bit tired and hanging out by the water is all anyone wants to do, easy cooling, and healthy are top priority. This fruit salad reminds me of Mexican candy and gives you a mouthful of sweet, smokey, spicy and tangy all at once! Serve it as a side with just about anything, or enjoy it on its own as a satisfying snack. • 2 cups of diced watermelon • 2 cups of diced pineapple • 2 cups of diced mango • Juice of 1 lime • 1/8 to 1/4 tsp Chile powder (I prefer ground chipotle chile for a sweet smokey taste, but any ground chile pepper is good as long as it’s just chiles and doesn’t have additives like garlic and salt) Combine all fruit and sprinkle with the lime juice and chili powder, serve immediately and …

Chilled Tomato & Basil Salad: by Briana Lassiter

I (Briana) can’t really remember where this recipe came from, I just remember my mom and I would make this salad together every Summer using fresh tomatoes, cucumbers and basil from our garden, and sometimes in the heat of the day, this would be all we would want to eat! Try serving it as a side for bbq chicken, a steak, grilled fish or devouring it by itself as I usually do! Chilled Tomato Basil salad • 1 1/2 medium sliced and quartered tomatoes • 1 1/2 peeled and thin sliced cucumber • 1 tablespoon chopped red onion • 3 sliced sweet peppers • Small handful of finely chopped fresh basil • Dash of salt, pepper, oregano, parsley and garlic powder to taste • Any Mediterranean type dressing for drizzling • Feta crumbles, or herbed goat cheese crumbles Layer all ingredients in a bowl and drizzle each layer with dressing, season with the salt, pepper, garlic, and herbs, and top with cheese. Talking with Your Mouth Full: You Are What You Eat pt 4

“Therefore, laying aside all malice, all deceit, hypocrisy, envy, and all evil speaking, as newborn babes, desire the pure milk of the word, that you may grow thereby, if indeed you have tasted that the Lord is gracious.” ~I PETER 2:1-3 NKJV In a letter of encouragement, the Apostle Peter writes that we, like newborn babes, should desire the pure milk of the word and grow in that. But let’s do a bit of backtracking in the word, recognizing that I Peter as one stream of thought in entirety and not segmented chapters. With that being said, what was Peter’s statement to the Body of Believers prior to chapter two verses one through three? “Since you have purified your souls in obeying the truth through the Spirit in sincere love of the brethren, love one another fervently with a pure heart, having been born again, not of corruptible seed but incorruptible, through the word of God which lives and abides forever, because, “All flesh is as grass, And all the glory of man as the flower of the grass. The grass withers, And its flower falls away, But the word of the Lord endures forever.” Now this is the …
